Abstract

Acrylamide, a heat-induced pollutant produced by the Maillard reaction, raises public health concerns because to its carcinogenic potential. Plantain chips, a favorite snack in tropical locations, are especially prone to acrylamide generation due to their carbohydrate amino acid composition and frying methods. This study summarizes current research on acrylamide levels in plantain chips, with an emphasis on the effects of raw material composition, processing conditions, and pre-treatment procedures. Analytical methods such as HPLC and LC-MS/MS reveal varying amounts, which are frequently comparable to potato chips. The health implications, regulatory viewpoints, and mitigation techniques are examined, with a focus on balancing safety and product quality. Future study should focus on region-specific studies, novel processing methods, and consumer education to limit acrylamide dangers while retaining local dietary traditions.
